June Spotlight: Q & A with Nathan Toleman –the Co-Founder and CEO of the Mulberry Group and the guru behind some of Melbourne’s most successful cafes; he has extensive experience in designing and operating restaurants and cafes in Melbourne.

  1. What is the most rewarding part about running some of Melbourne’s most iconic cafes?
    The chance to create spaces that make people feel good. Connecting with awesome staff, customers and suppliers.
  2. What is your favourite breakfast and how do you drink your coffee?
    Something creative, fresh and inventive. At the moment I am loving places that aren’t afraid to take a few risks. Usually, I have a batch brew or a long black.
  3. Why did Top Paddock, Higher Ground and Kettle Black choose Almo for its almond milk coffees?
    There was a strong demand from our customers to offer an alternative to milk. We tested a lot and found that Almo worked best with our coffee. We also loved the fact that it was so natural without any nasty additives. Plus, Linda is a legend!
  4. In your opinion, what food trend is going to dominate 2018?
    It will continue to be all about plant-based healthy options.
